The simple onion version was made on toasted bred, a light coat of duck or pork frozen fat, chopped white onions ( very fine chopped ) and generously put on the bread, after being salted and let to wet a little. It was summer afternoon's meal, with grandma and the old folks of the village talking about their memories, conflicts, the village... I can almost feel the air, hear the voices. Back then, of course, for me the sandwich was more important than the discussion, but I just felt so safe and good with those elderly people, unreachable ... in perfect peace and happiness.
The following pictures show the modern, richer version of that sandwich - with green onions, radish and Hungarian home made by mom mom ! I mean, she buys the pork meat, shreds it ( sorry for the lack of a better word ), makes the sausage, fries it, stores the lot.
